Dinner Report 05.18.2008

Dinner tonight was probably the best soup I have ever made. Tomatoes, garlic, and peppers marinaded in basalmic vinegar and olive oil and then roasted in the Big Green Egg. Then tossed into MOAB (the Mother Of All Blenders) and pureed. Bring up to heat and drizze in more olive oil and a little vegetable broth. I then tossed a spinach and sliced strawberry salad and drizzled some fresh basalmic Dijon vinaigrette. Soup was served with a dollop of greek yogurt mixes with lemon zest and Tabasco.

Beer pairings: Magic Hat #6 for the fruity compliment to the spinach and strawberry salad. To balance out the spiciness of the soup, a bottle of Pacifico Clara.

For dessert, Mandie baked some fresh peanut butter cookies. We just got a Kitchen-Aid stand mixer and have been baking like crazy lately.

    Yeah. It was probably the best soup I’ve had in a long time.
